My God it’s been a busy Easter! Along with both the sods being off school, and trying to work and juggle childcare, we’ve also had The boy’s 11th birthday, and in a couple of weeks we’ve got the Kraken’s 5th birthday (I definitely didn’t think that plan through properly when I had them)
The weather has been lovely though, and that obviously gets me to thinking about maybe not being quite so fat for the times when I have to wear less clothes…it’s fine in winter when you can bury yourself under extra layers, and pretend that you’re wearing 3 jumpers, instead of being slowly enveloped by your own stomach fat. But come summer you really need to expose body parts, and I want my ones to wobble just a bit less when I do.
Don’t get me wrong, I’m not fattist (although in most rooms I am fattest 😂) and I worship women who can embrace who they are and be happy with it. But I want to weigh less. And so I diet…
I have done them all over the years, but in the back of my head I’ve always known the truth. Eat less, do more. It’s that simple 😂 so that’s what I’m doing. I’m putting in less than I put out. The problem is, I’m a foodie. I live to eat, I don’t eat to live. I can’t stop myself. I’m like a Labrador with free access to a load of rubbish bins. I will just gorge myself.
That’s why this time I’m using shakes to get me through the day. This blog isn’t an advert so I’m not going to go on about them, but I’m using Exante shakes (don’t get the vegan ones, they taste like shit) for breakfast and lunch. Then having a healthy low calorie meal for dinner.
I have cheated a bit this weekend with a trip to Las Iguanas for some 2 for 1 cocktails, a tonne of tapas, and a huge chunk of birthday cake 😬 but other than that I’ve been pretty good. I feel great, I’m sleeping better, I’ve got more energy, and most importantly I’m not hungry.
I don’t want to get bored, so I’ve been scouring the internet for amazing salad recipes I can have with some protein in the evening. Below are some links to my favourites.
So if like me you’re looking to drop a few lbs for summer, or you just want some amazing accompaniments for your BBQ this summer, check out one of these recipes.
Epic summer salad
This recipe from BBC Good Food has got everything, and is perfect for BBQ’s. Epic summer salad
Tomato, peach, and bocconcini salad
I use the little mozzarella balls you can get in most supermarkets for this Tomato, peach and bocconcini salad and it’s truly delicious. I also leave out the bread so I’m not having too many carbs, but it’s still delicious.
Greek summer salad
I love a Greek salad served with some grilled chicken (I don’t eat lamb but obviously that would work perfectly too) I also love The blonde cook. She has some amazing recipes on her blog, and this one for Greek summer salad is one the best.
Grilled chicken and summer vegetables
I love this salad because it’s just a chuck it all on one bowl job, nice and easy. Also the vinaigrette is amazing! Chicken and summer vegetable salad
Sweet potato salad
I save this salad for a day when I’m exercising so I can burn off those extra carbs! But it’s delicious and a real treat.
Broccoli salad
We’re huge fans of broccoli in our house (the kraken will eat a whole head in one sitting) and this salad makes a nice change from eating leaves constantly.
In fact check out the whole blog, there are some great recipes on there.
So there you have it, 6 easy recipes to get you started. I’m off to drink a milkshake and fantasise about loaded fries…😂
