Chicken nuggets get a really bad deal I think. They’re really not the devils food they are portrayed to be. Unless you eat them every day for every meal, then I guess there might be an issue there…Everything in moderation is what I’m trying to say, and when you’re tired, had a busy day, or are just sick of cooking for a load of ungrateful turds, then they’re a great quick, simple dinner.
I’m fairly lucky, my kids will eat pretty much anything, but their eyes light up with joy when they see me pull the dippers out the freezer. I like to jazz things up a bit though, and you feel ever so much more righteous if you put the chips and beans away, and serve them in a different way. I’ve listed some of our favourites below.
(Of course if you’re super good you can always make your own chicken nuggets and leave the dippers in the freezer aisle of Tesco)
Sweet and sour chicken nuggets – super simple. Cook the nuggets, warm a jar of sweet and sour sauce and pour it over the nuggets. Serve with rice and prawn crackers.
Chicken nugget satay – make a super quick satay sauce. In a saucepan mix 3tbsp of crunchy peanut butter, a tin of coconut milk, a good glug of sweet chilli sauce and a splash of soy sauce. Bring it all to the boil in a saucepan. Serve with rice and some green beans or broccoli.
Chicken nugget burgers – you can always just get a normal burger bun, but sometimes I like to make them a bit fancy and use ciabatta rolls. Pile in cooked nuggets, cheese, cooked bacon, lettuce and mayo. Serve with sweet potato fries and a bit of coleslaw.
Chicken nugget wraps– exactly what it says, put them in a wrap with salad, cheese,whatever you like.
Mexican chicken nuggets stack – cook a potato waffle (and if you’ve never done this in a toaster, you haven’t lived. Straight from the freezer, and 2 pops of the toaster and they’re done), top them with cooked chicken nuggets, salsa, cheese, then they go under the grill until the cheese melts . Serve with nachos, sour cream and guacamole and salad.
Buffalo nuggets – mix equal parts melted butter and hot sauce and toss the cooked nuggets in the sauce, pile onto lettuce, drizzle with blue cheese salad dressing.
Cheesy tomato pasta nuggets – cook pasta and nuggets. Put the nuggets on top of the pasta in an oven proof dish. Top with a jar of tomato sauce, mozzarella and Parmesan cheese. Put it under the grill until it’s all melted and lovely. Serve with garlic bread.
There you have it, 7 really quick dinners that even the fussiest of eaters will devour, because after all, it’s only chicken nuggets 😉
